The humble burger has been elevated to new heights over the past number of years, and we are seeing burgers being loaded with toppings, sauces, and melts covered in batter, deep fried and stuffed with cheese. Fried buttermilk chicken burgers are gaining in popularity and are a staple on most burger menus along with vegan and vegetarian options which are holding their own alongside the traditional beef mince offerings. Burgers have now gone from just being meat between two buns to an indulgent feast!

Indulgence
Las Vegas restaurant Fleur has taken indulgence to the next level, creating the world’s most expensive burger – a whopping $5,000! The Fleur Burger 5000, as it is called, consists of a Wagyu beef and foie gras burger patty topped with truffle sauce and shaved black truffles served on a brioche truffle bn. It is served with a bottle of Bordeaux: a 1995 Chateau Petrus. But that’s not all…the wine is served in Ichendorf glasses, which you get to take home at the end of the meal. Turning a meal into the experience of a lifetime.

Burger Kits
Burger kits have also appeared in many homes over the past 18 months allowing people to cook restaurant favourites in the comforts of their own homes. Burger kits allow consumers to customise their own burgers and sit their taste.

Cooking Methods
The burger is getting the sous vide treatment in some restaurants and then reverse searing it. Vacuum packing the burger pattie and cooking the meat in a water bath for a set amount of time allowing the burger meat to be perfectly cooked maintaining the juiciness of the meat. Then the outside is seared on the BBQ caramelising the sugars and giving it a smoky quality on the outside.

Burger Pastes & Natural Stocks
Another way to impart flavour is by adding pastes and concentrated stocks, which is something The Culinary Food Group specialise in, using a stock to enhance the flavour of the meat or making a stock paste infused with other flavours such as beer, spices, or caramelised onions. We pack all the flavour into the paste so all you do is add it to the meat and shape your burgers. No season or any additional ingredients are required, the paste will deliver all the flavour!

STOUT BURGER TOPPED WITH CRISPY CARAMELIZED ONIONS, KIMCHI FLAVOURED CHEESE MELT AND BULGOGI BBQ SAUCE

Ingredients
40g Simply Stout Burger Paste
1kg Lean Beef Mince
5 Simply Kimchi Flavoured Cheese Melts
Simply Bulgogi BBQ Sauce
5 Brioche Buns

Method

  • Mix the paste in with the beef mince and form 200g burger patties.
  • Cook on the BBQ for 20 minutes turning after 4 minutes.
  • Grill the burger buns until toasted.
  • Put the melt on top of the burger on the BBQ until oozing and melted.
  • Place burger in bun, add some BBQ sauce and enjoy!
