Christmas Dessert – Irish Cream & Clementine Tiramisu
A seasonal twist on a traditional Italian dessert which benefits being made ahead of time.
Ingredients:
500g mascarpone cheese
100ml Baileys coffee flavour liqueur
250 ml strong good quality coffee
300g Savoiardi biscuits/ sponge fingers
Juice & zest of 8 clementine
6 eggs
60ml Gran Marnier or Orange liqueur
130g golden caster sugar
Grated dark chocolate
Method:
- Combine the clementine juice, orange liqueur and 30g caster sugar in a pan, bring to the boil and remove from the heat and allow to cool
- Separate the egg yolks and whites into two large bowls
- Whisk the egg whites until stiff
- Add the remaining sugar to the yolks and whisk until thick and foamy
- Whisk the mascarpone and baileys into the egg yolks until fully combined
- Fold the egg whites into this mixture keeping it light and airy
- Pour the coffee and clementine juice into a shallow dish and dip the sponge fingers to soak each side
- Layer the sponge fingers on the bottom of your serving dish until the bottom layer is covered (approx. half of the biscuits)
- Spread the mascarpone mix over this and repeat the layering process again
- Top the final layer with grated chocolate and clementine zest before serving
